What I'm Into This Week

Can you believe we are over halfway through October?! Neither can I. It’s been quite year, and I’m excited to see where the next year takes me. But for now, I’ll try to stay and live in the present. Here’s what I’m into this week:
Number 1: Butternut Squash
Our neighbor generously gave us a huge box of butternut squash from her garden, and I cannot get enough of it! Last night, I roasted a couple of the squash and turned the broiler on so that the edges were extra crispy. The squash was to die for! Plus, I whipped up a quick butternut squash and apple soup. It was so easy, with five ingredients: onion, granny smith apples, squash, and chicken broth. I literally could not stop eating it. Tomorrow, I plan on making this recipe for Butternut Squash Sauce from Stupid Easy Paleo. I made this for the first time last year and froze a ton of it. Boy was I happy to have that squash year round!
Number 2: Husker Football
Yes, we’re back! What a game today. I’m so glad that our team responded with a defining win at Minnesota. Now, we just need to keep the energy high and the positive vibes rolling. With a switch to a new coaching staff, change takes time, but hopefully, this win was a huge morale booster for the whole team and state of Nebraska!
Number 3: (Large) Kale Salads
I have been enjoying (huge) kale salads a couple times a week lately, and I love the way I feel after I eat them. I load the salad up with raw green kale, cut up egg, olives, carrots, turkey or salmon, red bell pepper, and whatever else looks good on the salad bar. I pile on the extra veggie toppings and eggs so that there is no need for dressing. I can’t wait to try a fall-inspired kale salad, with roasted butternut squash, turkey, and beets up on top.
Number 4: Teaching Group Fitness Classes
This semester, I signed up to be a mentee to a group fitness instructor at the campus rec center. This week, I taught half of a group fitness class for the first time. I created the workout and coordinated the music as well. Of course, Stacy’s Mom and Jealous (two of my jams) were on the list. It went super well and this coming Tuesday, I have the opportunity to teach the entire group fitness class! I have my workout planned and ready to go. I am so excited to continue to hone in on my teaching and leading skills. I take the Group Fitness Instructor Certification Exam on November 5th, so fingers crossed that I pass!
Number 5: Fall Break
I have reached the midway point in my final semester at UNL. I cannot believe how fast this semester has gone. Soon, I’ll be graduated and off in the real world as an adult. Scary thoughts, but I know that my parents and my schooling have prepared me well to take on whatever God’s plan is for me.
